Alfajores de Navidad are shortbread cookies typical of Latin America, and particularly popular in Argentina and Chile. These cookies (also available in a gluten-free version), lightly flavored with vanilla or lemon, are filled with dulce de leche and rolled in shredded coconut for an extra touch of sweetness. Dough preparation: In a large bowl, sift together the cornstarch, arrowroot (if using), gluten-free flour, baking powder, and baking soda. Mix these dry ingredients well.
Shaping the biscuits: Preheat the oven to 180°C (350°F). Roll out the dough between two sheets of parchment paper or cling film to a thickness of about 5 mm (¼ inch). Using a round cookie cutter, cut out circles 5 cm (2 inches) in diameter.
